Why do exorcists cut off entities' limbs in combat? To check, first of all, poorly studied and unknown entities, before a more global attack. And it's regulated by a special manual.
What's it for? For many things at once: to find out if an entity is regenerative, to see if something else grows from the severed areas, if the blood is poison/acid, if gas or other entities are bursting out of the wound, to check the strength of the hide, tissue and bones in general.
